Deli Style Roast Beef
This is one of my favorites! I think because it is so easy and you can do so much with it. From french dip, to hot or cold roast beef sandwiches. Or just sliced up on a salad you can’t go wrong!
Start off with a 4 pound rump or round roast
Preheat your oven to 200 degrees
Set your roast out until it is room temp, pat off the moisture with a paper towel
Mix up your seasoning rub, I use 2TBS pepper, 1TBS garlic salt, 1TBS granulated garlic, 1TSP cumin. Use whatever spice you like.
Rub the roast with 1TBS olive oil, then rub on your seasoning.
Place in a pan, I like to use a dutch oven but use what you have.
Cover it and cook until meat thermometer reaches 130 degrees around 3 hours
This is where I really like my in oven thermometer. I can set it to 130 and my oven will shut off when it reaches that temp. So I can leave the house and not worry about it. If you are shopping for a new oven I recommend getting that feature.
Once it reaches temperature let set until cool before slicing. Slice thin and enjoy!
