End of Summer Fajitas
There is no wrong way to make these, and what makes them so great is you just use what you have. I have an overabundance of squash in my garden so I sliced some up and threw it in. What makes it great is the fresh ingredients and of course great beef!
I start by marinating the beef. I use our fajita strips mostly, but I have also done it with flank steak or round steak. Just slice it thin.
Marinate beef for and hour or more. Ingredients-
Half cup olive oil
3-4 TBSP Worcestershire Sause
Minced Garlic Cloves 3-4
Half TSP red pepper flakes
1 TBSP Cumin
2 TBSP or more if you like chopped cilantro
2 TBS lime juice
Salt and Pepper to taste'
Mix together and pour half over sliced beef, pour the rest over your sliced veggies. In two different zip lock bags.
Slice up some onions, whatever kind of peppers you like, and some yellow squash. Let them marinate for at least an hour.
I use the flat top grill. Get it hot and put down some olive oil, cook meat until it is browned. Add veggies and cook until they are tender. Push meat and veggies to the side of the grill on warm and cook tortillas.
Top with salsa, sour cream, cheese, fresh lime juice, or what every you like.
This is such a quick easy supper, and one everyone will love.
