Oxtail Soup
Oxtail is one of the most flavorful tender meats you will eat. This recipe is so easy! Just throw everything in the slow cooker in the morning and dinner is ready.
1 onion
1 can tomato sauce
3 cloves garlic
1 cup red wine
1 cup beef broth
1 cup orzo
A few leaves of parsley (if you don’t have fresh dried is fine)
Cut the oxtail in 2 inch pieces. chop onion and garlic, put everything except orzo in the slow cooker on medium/ low. Season well with your favorite seasoning. Let cook all day. About 30 minutes before you want to eat cook the orzo on your stove according to the box. Pull the bones out and look closely there are some little ones. Add the cooked orzo. Salt and pepper to taste.
This recipe was originally made with rice, but I was out and substituted it with orzo. I think the orzo is better, but use what your have.
